Fig and walnut loaf

Dried figs soaked overnight in black tea, folded into a rye starter dough with toasted walnuts. Long cold proof, baked in a covered pot. Keeps a week wrapped in linen.

Quick pickled plums

Firm plums, halved, in a warm brine of cider vinegar, brown sugar, star anise and a strip of orange peel. Ready the next day; good with cheese and roast pork.

Notes on drying fruit at home

Low oven, door ajar, a wooden spoon in the gap. Slice evenly, turn once, and pull the pieces when they bend without beading. Store in jars with a little air.
